Fried Egg Plant in Dashi
This is egg plant version of Age-dashi-Tofu.
Fry egg plants and marinate them to dashi (Japanese soup stock, soy sauce, sugar, and sake), and top with green onion and graded white radish ( Daikon oroshi).
