Cannelloni
This is recipe inspired by America's test kitchen using sheets of lasagna in stead of homemade crepe for Cannelloni. The result is outstanding. Really tastes like what you have in restaurants !
How to Make: (portion for 2)
- Boil 4 sheets lasagna. ( I do it in microwave using the same container where I assemble final product)
- In a mixing bowl, mix one packet of Ricotta cheese (you may want to use low-fat version), minced greens & herbs or whatever you feel like, and salt & pepper. (e.g. basil, mint, spinach, pine nuts, tomato, etc...)
- Cut each sheet of lasagna into half, and wrap cheese mixture above. You will get 8 rolls.
- Place them in baking container. After place 4 rolls in first layer, put some tomato pasta sauce, then proceed to second layer. After the second layer, put some more tomato sauce, and cover it with melt cheese (cheese for pizza)
- Bake till everything get heated. Everything is edible without being cooked, so don't worry about cooking time.

Spicy Bean Sprout
Mix boiled bean sprout with Kochu-jian (Spicy Korean Miso) and garlic.

Marinated Eggplant
Put whole eggplant in oven toaster, and roast it till skin really gets burnt.
Leave it over night, and peal the skin next day.
Marinate chopped eggplants with tomato with soy sauce, sesame oil, red chili and vinegar.

Colored Beats Salad
Slice boiled (or microwaved as whole) colored beats, and top with creamy dressing.
You can use ranch dressing or mixture of mayo & vinegar.
I top it with goat cheese crumble, and fava beans.

I used Brioche buns from TJ, and soak in milk & egg mixture lightly.

Artichoke Pesto Pasta (アーティチョーク・ペストパスタ)
The sauce is just mixture of canned artichoke, pesto sauce, mozzarella cheese, and fresh tomato (All from TJ). Toss it with boiled pasta. No cooking involved !

Whole Egg Glatin (丸ごと茄子のグラタン)
A friend now has a vegetable garden which produces wonderful vegetables plentifully, and we've got this amazingly beautiful eggplant ! I stuffed it with minced chicken, egg plant, onion, and tomato sauce. Yummy !!!

Bitter Gourd and Pork (ニガウリのチャンプルー)
This is a dish eaten often in Okinawa, southern most island in Japan. Saute each ingredients such as biter gourd, pork, scrambled egg, garlic, onion, tofu separately, and mix them in the very end and season it with fish sauce, soy sauce, sugar, sake and black pepper. It will beat summer heat !

Coltd Tomato Pasta(トマトの冷たいパスタ)
I don't know how many times I made this dish. Just mix tomato (heir room tomato or any other super sweet tomato), mozzarella cheese, basil, lemon juice or vinegar, crashed garlic, and a bit of suger with pasta.

Boiled Crab (蟹)
There is a crab boat which sells live crabs really cheap in Half Moon Bay marina.
It's a bit of cruelty going on in the boiling process, but after closing the lid, crabs are pretty quiet.

Tandorii Chicken and Coconut Fried Rice(タンドリチキンとココナッツライス)
Coconut rice is taught by Mr. A as my future brother in-low. Stir fry rice with Indian spices such as cumin, mustard seed, etc, and steam it after adding half water and half coconut milk . It's really good !
