Asparagus and Egg White

Chicken Pine Nuts

How to make "Chicken Pine Nuts"
1. roast pine nuts till nicely roasted.
2. marinate chicken in soy sauce, sake, garlic, and a bit of baking soda.
3. Stir fry chicken, zuccini, and yellow pepper separately till they have right texture.
4. put all the ingredient to a pan to heat up together.

Quiche with ham, Red/Yellow pepper.


Quiche and sweet cone and endive salad

How to make Quiche:

1. Mix egg, Parmesan cheese, cream, and your favorite vegetable/ham.
2. Bake frozen pie crust till it's half baked.
3. Pour egg mixture to pie crust.
4. Bake it and when pie crust became brown, put aluminum foil over it.

How to make endive salad:

- mix endive, orange champagne vinegar, nuts, and olive oil.
- I prefer no salt.

How to make spice sweet cone:
- rub boiled cone with chili powder, lemon, and salt.

Lemon & Butter Sole, German Potato, Cream Brussel Sprout

Butter sauteed sole with lemon zest is such a simple yet delicate feast.

How to make lemon & butter Sole:
1. Put salt and pepper both side of sole, and cover it with flour.
2. Heat pan and put generous amount of butter
3. When butter melts half way, saute the sole .
4. Serve on a plate and squeeze lemon before you eat.

How to make German potato:
1. Stir fry chopped onion till it gets golden brown
2. Put diced potato and cook till it's almost done. If potato starts to get stuck to the bottom of pan, add wine.
3. Add chopped garlic and mushroom.
4. When all the vegetables are cooked, add soy sauce and pepper.

How to make Cream Brussels Sprout
1. Saute Brussels Sprout till it gets really soft and add salt/pepper.
2. Add cream and heat it up for few minutes.

Thai Chicken Curry

Chicken + Indian spice+ coconut curry + ginger = Thai Chicken Curry.

It can be noodle soup as well

Chicken with Thyme

Chicken can be very soft and flavorful just by keep it with salt and pepper for a day in a plastic bag.
The rest is up to you !



How to make:
- Put chicken in a plastic bag and put salt and pepper.
- Massage it and keep it in fridge for a day.
- Saute chicken with thyme and garlic.
- Add white wine for flavor
- After taking out chicken from pan, add wine for deglazing to make sauce.

Kabocha Gratin

I had this gratin in a restaurant in Tokyo. Kabocha is Japanese pumpkin which is very sweet and more firm than American pumpkin.
How to make:
- microwave whole kabocha for 6min till you can feel it's soft from outside.
- cut top part and remove seeds and fiber.
- make white sauce with sauteed vegetable
-- saute onion, carrot, and other vegetable
-- add butter and flour
-- stir in low heat till flour is fully incorporated.
-- gradually add milk and mix till the sauce becomes thick and creamy.
- place boiled shrimps on the kabocha and cover it with white sauce.
- put cheese on top and bake it till shrimp is cooked

Egg Curry and Cauliflower & Potato Curry

All the curry recipe is same, but depending on vegetable inside, it tastes so different !


How to make curry:
- roast mustard seeds, cumin, and red chili till mustard seed burst.
- put chopped onion.
- put vegetable you like.
- add water and chopped tomato.
- add other spice such as turmeric, red chili, etc. sometimes sugar...

Indian style Chicken Kabab

This flavorful chicken kabab takes 5min to prepare and 10 min to cook.


How to make "Indian style Chicken Kabab":

- mix following things
-- minced chicken
-- bread crumb soaked in milk
-- chopped vegetable ( carrot, onion, lotus root)
-- spice you like : easy choice is put tandori chicken masala which is mixture of many spice. I added cinnamon, mustard seed, turmeric, and so on.

- place aluminum foil or cooking sheet to tray of toaster, and fill mixture there
- bake it for 10 to 20 min.
- cut it into rectangular shape. ( which reminds me of Japanese "Matsukasa-yaki" see below)

How to make "Matsukasa-yaki":
- mix following things
-- minced chicken
-- ginger paste
-- miso paste
-- sugar
-- sake
-- bread crumb

- place aluminum foil or cooking sheet to tray of toaster, fill mixture there, and cover surface with white sesame.
- bake it for 10 to 20 min.
- cut it into rectangular shape. ( which reminds me of Japanese "Matsukasa-yaki" see below)

Vegetable Terrine

Vegetable Terrine with sunny side up makes a morning somewhat different.




How to Make:
- Prepare boiled vegetable ( cauliflower, sliced zuccini, and red/yellow pepper)
- Put gelatin to heated vegetable broth, and add salt and pepper
- Place vegetable in tupperware and pour broth carefully so that it won't move vegetable.
- Cool it down in fridge till gelatin get solid.

Application:
- Yogurt + lemon + salt/pepper + olive oil goes well with it.

Beginning

Coming back from work everyday and deciding what to cook in the end of the day is sometime hard.
Sometimes my brain is hungry enough to improvise amazing dishes, but this does not happen always.
I decided to keep the record of what I cooked for future reference for myself,
and detailed recipe is not there unless the recipe is new to me and myself may forget how to make it.
Please let me know if you want to know how to make specific dishes.
So, this is start of my cooking diary.
